postheadericon Yummy Banana Cake with caramel

Dish Description
A very tasty, juicy and different cake that our friend Chara suggested. The recipe comes from chef Argiro Barbarigou and with less than 20 min of preparation our cake was a success! Ideal for breakfast or to enjoy with coffee or tea! What is different about this cake is that it has a nice banana caramel coating that we create initially at the bottom of our pan and it comes on the upside when we turn the cake upside down. 


8-10 servings

Great Freaky Chefs you will need:
For the cake:
  • 125 gr. butter
  • ¾ cup raw cane sugar
  • 3 eggs
  • 1 and ¾ cups soft flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 2 small vanillas
  • 2 bananas ripped and cut in small pieces
  • ¾ cup walnuts cut or grounded (depending on how you like it better)
  • ¾ cup chocolate chips
Banana caramel coating:
  • 1/3 cup raw cane sugar
  • 2 tablespoons unsalted butter
  • 1 banana cut is thin slices
Execution:
Preheat oven in 170oC.

Banana caramel coating:
Prepare a cooking pan, covering it with butter. Add the sugar and butter in a frying pan and cook in low heat until it becomes caramel.  Place the banana slices and let rest.

Cake:
Using the mixer, beat the butter with sugar for 5-6min then add the eggs and continue.
Riddle the flour, baking powder, baking soda and vanilla and add them in the mix. Continue beating until you have a smooth mix.
Add the walnuts, banana and chocolate chips and blend with a spoon.


Poor the mix in the pan covering the banana/caramel coating and bake in the oven for about 45 min.

Let rest for 10 min and then turn the cake upside down on a plate so that you have the banana/caramel coating upside.


Tip1: It is really important to riddle the flour, baking soda and baking powder in order to have a fluffy cake!
Tip 2: Make sure all ingredients are in room temperature when you use them

postheadericon Chicken with mushrooms

Description of plate
This delicious chicken recipe comes from chef Nena Ismirnoglou and gourmet magazine “gastronomos”.

For 3-4 people Great Freaky Chefs you need:
  • 1-2 Chicken breasts with the bone
  • 60 ml olive oil and 2 tablespoons of olive oil for the mushrooms
  • 2-3 onions chopped
  • 2 bay leaves
  • 500gr small mushrooms cut in 2-4 pieces
  • 2 garlic cloves
  • 200 ml white wine
  • 150-200γρ chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • Salt, pepper
To execute:
Place the casserole on the hot plate and let it get really hot. Add the olive oil and when it is quite hot, add the chicken and let it brown. As soon as it gets brown it will easily tear away from the casserole. When the chicken browns all around we take it off the casserole and let is stand.

In the same casserole, we add some oil, we place the chopped onions, salt, bay leaves and 100 ml warm water and let them cook, covered, in low heat for 10 minutes. This was the onion becomes really sweet! Be careful! You may need to add some water as the onion cooks.

In parallel and in a separate pan, we place the rest of the oil and sauté the garlic and the mushrooms until they are soft.

Going back to the casserole with the onions, and given that they are now quite tender, we add the chicken and the mushrooms. At this point we also add some salt and pepper.

We turn the fire on and we add the wine. Let the wine evaporate (3-4 min) and then add the chicken broth, cover and let cook for about 25-30 min.

After 30 min, try the chicken to make sure it is well cooked and add the thyme and oregano.

You may serve the chicken with mashed potatoes, rice or even pasta that you can add in the casserole after you cook them.
